
Sweet Keto Protein Pancakes

Ingredients (for about 8 pancakes)
- 200 ml OVOBOX liquid egg white
- 2 tablespoons almond flour (or coconut flour – for firmer pancakes)
- 1 tablespoon mascarpone, full-fat quark, or cream cheese (optional, for creaminess)
- 1/2 teaspoon baking powder
- sweetener to taste (e.g., erythritol, stevia)
- a pinch of cinnamon or vanilla
- clarified butter / coconut oil for frying
- strawberries and blueberries
- peanut butter
Preparation:
- In a bowl, mix OVOBOX liquid egg white with almond flour, mascarpone (if using), baking powder, sweetener and spices.
- Heat a pan with a little fat (clarified butter works best).
- Spoon small portions of the batter onto the pan and fry over medium heat for about 2 minutes on each side, until golden and fluffy.
- Serve with strawberries and 100% peanut butter. You can also use other toppings, such as blueberries (in small amounts – they are low in sugar), unsweetened coconut yogurt, shredded coconut, or cinnamon.
