Ingredients (for 1 servings)
- 200 ml OVOBOX liquid egg white
- 1/2 teaspoon olive oil (or clarified butter for frying)
- a few cherry tomatoes
- 1/3 of a cucumber
- 1/2 ball of light mozzarella, sliced
- fresh arugula
- dried oregano and basil
- salt
- pepper
Preparation:
- Brush a small pan with your chosen fat and heat it up.
- Pour in the OVOBOX liquid egg whites, lightly salt, and sprinkle with herbs.
- Cook over medium heat with a lid on until set (like a crêpe). Do not flip.
- Transfer the omelette to a plate.
- On one half, arrange slices of tomato, mozzarella, cucumber, and arugula.
- Optional: drizzle with a little olive oil or balsamic vinegar.
- Fold the omelette in half. Done!
- Instead of mozzarella: use feta cheese or cottage cheese
- Instead of tomato: use grilled zucchini or bell pepper

Variations:
