
Savory High-Protein Muffins
Egg white muffins? Why not! The combination of OVOBOX liquid egg white, mozzarella, sun-dried tomatoes, bell pepper, and spinach creates a delicious Mediterranean-style mix that’s perfect for breakfast, a lunchbox, or a healthy snack for an outdoor trip. This is a quick recipe for a light and nutrient-rich snack that doesn’t require much time or effort. The muffins store well and taste great both warm and cold. Ingredients (for 12 muffins)
- 500 ml OVOBOX liquid egg white
- 125 g light mozzarella (crumbled)
- 6–8 sun-dried tomatoes (finely diced)
- 1 small red bell pepper (finely chopped)
- 2 handfuls of fresh spinach (roughly chopped)
- 1 teaspoon baking powder
- salt to taste
- pepper to taste
- granulated garlic to taste
- Herbes de Provence or oregano to taste
Preparation:
- Preheat the oven to 180°C (top and bottom heat).
- If you prefer, lightly sauté the spinach to reduce its volume.
- In a large bowl, mix the OVOBOX liquid egg white with the vegetables, mozzarella, and seasonings. Add the baking powder and mix again.
- Transfer the mixture to a greased baking tin (or lined with paper muffin cups).
- Bake for about 20–25 minutes, until the muffins are set and lightly golden.
- After baking, let them cool for a while, then gently remove from the tin.
